Traditional Tuscan Products


WHEN CAN A PRODUCT REALLY BE CALLED “TRADITIONAL”?

An agricultural product is considered traditional when the handcrafted methods are carried out on one’s land homogeneously and the traditional rules embraced extend over time, or at least for a period of 25 years, as defined by the law (article 8 of the DLgs 173/98) relating to the evaluation of national gastronomic patrimony and by the subsequent law (DM of the Ministry for Agricultural and Forestry Policies no. 350 of 08/08/1999) which stipulates the regulations concerning identification.

Tuscany is said to be the region with the greatest number of agricultural products, and testifies to the enormous potentiality of this land and to the variety of productive, traditional and cultural techniques in the field of gastronomy and foodstuffs.

A list has been set up based on a special survey carried out by Arsia on all regional areas, with the collaboration of various public entities. A preliminary list initially drew up 302 traditional products but after an annual update, the products now total 372. An identifying entry for each product has been made wherein specifics relating to the procedures, handcrafted methods and ageing process are detailed, including the consistency of the land production, when available.
