Regional Knives of Ancient Italian Tradition An extract from the Statute of the Cutlers of Scarperia dated 1538, the year in which the Vicar who, in the name of the Florentine Republic, governed what was then Castel SanBarnaba della Scarperia, decided to regulate this trade: “..In order to maintain the art of Castel SanBarnaba della Scarperia and to make sure that it does not become known to others, it is hereby ordered that every master cutler may only employ his own sons as workers…. and in order to maintain the reputation of the work of Scarperia and to avoid fraud, it is hereby ordered that these knives may only be made using steel..” The cutlers’ trade has been handed down for centuries: the Consigli brothers, proprietors of "Coltellerie Conaz", are carrying on this trade following traditional manufacturing methods.
