In the mountainous areas of Pistoia, chestnuts are one of the main foodstuffs in the local economy, where the local women are adept at rustling up something good to put on the table, especially with marrons. Typical mountain foods are necci with ricotta, and castagnaccio, a chestnut cake – just to show you the kind of dishes that can be made using marrons, sweet tasty chestnuts suitable for a great number of recipes. The jam is also excellent if eaten by the spoonful or spread on toast.
