Borlotti beans

These beans are easily recognisable by their flecked reddish skins; a variety that is widely grown and eaten especially in northern Italy. There are lots of ways to prepare these beans, but here is one special way:
  • Boil the beans in water, and serve with a red Tropea onion, very thinly sliced, add Extra Virgin olive oil, preferably Tuscan or Umbrian for the fruity flavour, and some freshly-milled black pepper. If you need more energy, add tuna fish. It is a unique dish, perhaps not recommended before a romantic rendezvous.

    It is advisable to soak the beans in water for several hours before cooking in an earthenware pot for about an hour; test to see if done.
