This earthenware pot is fantastic for cooking legumes or vegetables that must be simmered at a temperature below 100°C. We suggest you try cooking dried beans, without soaking them beforehand: put them in this large earthenware pot and cover with cold water (the water level should be about 5 cm. above the beans), add a sprig of sage, a tomato, a pinch of salt and a tablespoon of olive oil; put the terracotta pot on a very low gas flame or electric plate and simmer for about two hours. The beans will still be whole, and in tact, and ready to serve.
