Duly written by a poet, because pasta is the pride of the table; it delights the palate, and is a staple food. And other poets have uttered more: “Oh yes, unhappy forever is he who not in person, but only through others’ lips will get the glad news”. But, if eating pasta is a pleasure, then making it – for it must be done well – is an art, with its roots of excellence steeped in artisan tradition: the loving hands of the artisan who lays out the pasta on looms to dry in the open air for 36 long hours is just one such example. “And it is for this [reason] that Tuscany, home of the arts and of wine, produces pasta that is on par with that excellent pasta of Fara San Martino”.
