In my long career, I have sliced many delicatessen meats, like finocchiona, Tuscan salami and prosciutto (cured ham), and have always done it with a knife. I have never been keen on using a slicer. However the salami that I recommend may be sliced as you prefer, also with our knives from Scarperia.
